Man….

Let me explain that….

So…closing on our house was supposed to be August 28. It’s August 31st and we’re not closed. They made a big deal out of the neighbors property, so they had to get that resolved. We got what we wanted; thank goodness. After that, we had to get a surveyor to fix it. Turns out it isn’t happening when they say jump, so now it’s going to be September 4th. Oh but wait…..turns out that it probably wont be ready then either. We could be staying the extra two weeks we actually asked for. That’s good news for us, BUT we already packed EVERYTHING. We have no dishes, pots, pans, etc. We’ve unpacked a few pots we could find. It’s such a struggle to cook. this morning I made cinnamon toast and had to use a glass baking dish because I have no cookie sheets here. It’s annoying. Then the other bad news is that we are having a hurricane moving to shore at Florida. The problem with this is that if it hits Florida, Georgia, or the Carolina’s we’re getting rain. That means more days that we wont have our new house ready. It’s a nightmare, but we’re surviving.

Pork Tenderloin

1 tablespoon oil

2 tablespoons lemon juice

2 teaspoons Italian Seasoning

1 teaspoon Garlic Powder

1 teaspoon cumin

1 teaspoon salt

1 teaspoon Chili Powder

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

Mix seasoning together. Use oil to rub on the pork. Rub pork with seasoning. Put into a greased pan and sprinkle with the lemon juice. Put into a 400 degree oven until cooked through.
